Use of LAE® as processing aid in Canada.
In 2015, LAE® was included in the database of the Inventory of Substances Used as Processing Aid (IPA) that depends on Codex Committee on Food Additives (CCFA). This inclusion in the IPA list implies that LAE® meets the definition of processing aid established by Codex.
Now Health Canada, has issued a letter of no objection (LONO) issued on December 9, 2022. Therefore, LAE® can be applied as a processing aid antimicrobial treatment to the surface of raw meat (beef, pork and poultry) at a maximum level of 30 ppm.
